Ordering, checkout, and the pass are disconnected, and peak hours get messy
What it costs: Table turns slow down and the guest experience falls apart. Staff work the rush in constant chaos.
Front of house and the kitchen lose the thread
Handwritten tickets, or a standalone ordering device that never reaches the kitchen display, turn into missed and wrong orders. Checkout can already be closed while the kitchen printer jams or drops the ticket, and the complaint is simple: the guest paid, and the dish was never made.
Changes are hard to pass through
An extra dish or a void has to be told to the kitchen by hand. At peak, that means shouting across the floor. It is slow, and it goes wrong.
The shift close does not reconcile
At handover, front-of-house takings and kitchen output counts do not match, and waste cannot be traced.
